Melt over very low heat (or a double boiler) until the chocolate chips are melted. Remove from heat, stir in 1 tsp of vanilla. Pour into a parchment paper lined pan. Place in fridge until set (about 4 hours). Remove from pan and cut into bite sized squares.<br /><br />I made this for Christmas this year for ourselves and for giving. And what I like about these is that they aren't overly sweet like some fudge recipes can be. It doesn't have to be hard you just plan for treats. Biscuit Mix + brown sugar+ spices (I like cinnamon and nutmeg) and you have coffee cake. Easy to do and done in under an hour. Tortilla chips make or buy corn tortillas cut into chip size soak over night in lime juice. Fry up the next day and you will have killer chips and you won't need to salt them. I am a salt fiend and I don't add salt to these chips.<br />Great for folks reducing their salt intake.<br />I have good selection of canned fruit but I'm adding some pie filling and pudding next year to go along with it.<br />I think the whole point of prepping is not to suffer for any reason. Can you live on rice and beans?
